First, choline is extracted from sample with methanol and then it separated from its phospholipid forms by hydrolysis. After that, choline is precipitated in hydrolysis liquid as Reinecke’s salt in alkaline-acidic solution. After washing, sediments are dissolved in acetone and the amount of choline is calculated by using spectrophotometry. Some microbiological methods have also been developed to assess choline levels.
